Matt's Fruit Compote

- 1/2 cup dried apricots, diced small
- 1/2 cup dried cherries
- 1/2 cup currants
- 1/2 cup golden raisins
- 3/4 cup red wine vinegar
- 1/2 cup sugar
- 2 ea. bay leaves
- 2 ea. cinnamon sticks
- 1 cup water
- Combine all ingredients except for fruit in a saucepan. Bring to a boil, stirring occasionally.
- Stir in the fruit, and turn the heat down to simmer. Cook all together, adding more water if needed, for 30 minutes.
- You may want to adjust the sweetness or tartness by adding more sugar or vinegar. Other fruits can be used, such as prunes, red flame raisins, or figs.
