Matt's Fruit Compote

  • 1/2 cup dried apricots, diced small
  • 1/2 cup dried cherries
  • 1/2 cup currants
  • 1/2 cup golden raisins
  • 3/4 cup red wine vinegar
  • 1/2 cup sugar
  • 2 ea. bay leaves
  • 2 ea. cinnamon sticks
  • 1 cup water
  1. Combine all ingredients except for fruit in a saucepan. Bring to a boil, stirring occasionally.

  2. Stir in the fruit, and turn the heat down to simmer. Cook all together, adding more water if needed, for 30 minutes.

  • You may want to adjust the sweetness or tartness by adding more sugar or vinegar. Other fruits can be used, such as prunes, red flame raisins, or figs.
